Lamb stew (Irish)

I guess we could call this Lamb stew Irish all though I’m sure there are just as many Irish stew recipes as there are towns in Ireland ;-) . This recipe was loosely based on this about.com article.

  • 600gr lamb cubes
  • 2 white of leeks
  • 5 medium potatoes
  • thyme
  • a bay leaf
  • butter
  • 1 onion
  • seasoning
  • 500cc of water

First we brown the lamb in a bit of butter. When browned we add the onion and brown that too. Then we add the water making sure. The brown bits in the bottom of the pan will give flavor. We add the bay leaf and the thyme and we let it simmer for an hour. We then add the leeks and potatoes and let it simmer untill the potatoes and leaks are tender, which should be about half an hour.
