Shrimp (scampi) with Madras curry powder

this is a nice and spicy way to make scampi.

  • half a kilo unpeeled scampi
  • 1 teaspoon of Madras curry powder
  • 1 small onion
  • 100cc of cream
  • 1 teaspoon of sugar
  • olive oil
  • 100cc of vegetable stock

Peel the shrimp. Take a pan and put a little bit of olive oil in it. When the olive oil is hot add the scampi. Let them sauté for a minute or two then add the finely chopped onion. Let the onion soften. Don’t overcook.  Add the curry powder and sugar (The longer you sauté the curry the hotter it will become). Then add the stock and cream. Let it reduce by half. And then it is ready to serve. All this should be done in 5 minutes, you do not want to overcook the scampi. And it serves 4 as an entrée.
