Braising the turkey

Last night I cooked Braised turkey. It was based on a recipe found on the kitchen and which was found on the New-York times website.

Ingredients

  • 1 turkey mine was 2kg
  • 1 leek only the white part
  • 2 carrots
  • 1 onion
  • 4 celery stlks
  • 10 mushrooms
  • 1/2 liter of chicken stock
  • 200gr of salty bacon because you can never have enough bacon.
  • butter
  • seasoning

I started by butchering the turkey (sorry little girl) and then browned the wings and thighs in a little bit of butter seasoning them before that of course. I added the salty bacon somewhere halfway thru the baking process. When nicely browned I moved them to 2 ovendishes (some bacon, 1 thigh and wing in each). I then cooked the vegetables in the pan which I used for the turkey so that they could pickup some of the flavor. The vegetables were chopped in big pieces (1cm). After they were softened I added them to the turkey. Then I added the chicken stock just so the turkey was not covered completely. I then put it in a preheated 180°C oven for 1h30 turning the turkey halway thru the process. In the mean while I browned the breastmeat and added them to the oven dishes for anoter 30 min.

I served with sweet vegetables. If you don’t like your vegies overcooked you should not use the ones above but make something different to add to it.
